Qofte të fërguara-inspired Fried Meatballs (Albania)

Yield:  8  Servings


1 1/2 lb ground beef or lamb
cooked rice
1 small onion, finely minced
¼ cup chopped cheese (any soft cheese)
1 egg
1 tbsp chopped parsley
1 tbsp granulated garlic
1 tsp salt
½ tsp black pepper

For dredge:

1 tbsp oregano
1 tsp garlic
1 cup flour
salt and pepper, to taste
1 cup oil (olive oil recommended)

For sauce:

1 onion, chopped
2 cups beef broth
¼ cup lemon juice
2 tbsps olive oil
salt and pepper to taste


Add ground meat, egg, onion, parsley, salt, pepper, and mint. Mix thoroughly, but do not overwork.  Add bread crumbs to desired consistency, form into meatballs or meat patties.  Mix flour, oregano, garlic, salt and pepper, roll meatballs in this mixture, and fry in hot oil.  Remove from heat and reserve.

In other saucepan, sweat onions in hot olive oil.  Add broth and cook for 2 minutes, add lemon juice, salt and pepper, and simmer on medium heat for a few minutes.  Add meatballs and heat through.

Serve hot with potatoes and vegetables.

Turli perimesh – Mixed Vegetables (Albania)

Yield:  4 Servings


2 lbs various vegetables (peppers, eggplant, okra, zucchini, potatoes, etc.)
1/2 cup oil, divided
1 cup chopped onion
1 cup peeled chopped tomatoes
1 tablespoon chopped parsley


After cutting off inedible tips of vegetables, wash and slice them into 1-inch squares. Sauté vegetables in half of the oil and remove them from the frying pan. Sauté onion and tomatoes in the remaining oil, and season with parsley, salt, and pepper.

Put everything in a stock pot with a cup of water, cover tightly, and simmer until almost all moisture has cooked away. Serve hot, accompanied by steak, meatballs, or any other main dish.
