Beninese-Inspired Meatballs (Benin)
Yield: 8-10 Servings
2 lb. ground chicken
1 tbsp finely chopped peanuts
½ tsp chili paste
1 bunch green onions, finely chopped
1 tbsp garlic powder
1 tbsp ketchup
1 tsp salt
½ tsp ground pepper
2 onions, thinly sliced
6 tomatoes, peeled, de-seeded, and chopped (or three cans of diced tomatoes)
2 tbsp red palm oil
salt and freshly-ground black pepper to taste
In a mixing bowl, combine the chicken and the next seven ingredients, mix well but do not overwork. Add enough breadcrumbs to tighten the mixture and form the meatballs.
Heat the red palm oil in a pan, add the chicken meat balls and saute until golden brown all over. Add the onions and tomatoes and season with salt and black pepper to taste. Bring to a boil, then simmer, covering the pan. Cook over low heat for 15 minutes. Serve immediately.
