Marshall Islands

marshall islands-flagI have had a difficult time trying to find a really great Marshallese recipe online, except for the many renditions of Macadamia nut pie.  So after an exhaustive search which turned up one good travel site that raved about, but had no recipes for, their deliciously fresh and tender roasted chicken, I changed search engines and stumbled across this inspired recipe that was “approved”  at a Marshallese dinner party.  So here goes…

  • The Republic of the Marshall Islands comprise two parallel archipelago chains: the Ratak Chain (sunrise) and the Ralik Chain (sunset)
  • Their motto is “Jepilpilin ke ejukaan” which means” Accomplishment through Joint Effort”
  • The Marshall Islands have the highest rate of leprosy in the world, the only other animal that can contract the disease is the armadillo
  • While there are many indigenous aquatic mammals in the Marshall Islands, the only indigenous land mammal is the kiore, or Polynesian rat (Rattus exulans)
  • Two of the atolls, Bikini Island and Elugelab (which no longer exists), served as U.S. testing sites for atomic bombs in the 1950s
