Central African Republic

CAR-Inspired Meatballs with Pumpkin Seeds (Central African Republic)


1-1/2 lb ground beef
shelled pumpkin seeds
1 onion
6 garlic cloves, peeled
1/2 tsp cumin
pinch cayenne pepper
1 tsp salt
1/2 tsp pepper
pinch cayenne pepper
1 tbsp ketchup
1 tbsp Worcestershire sauce
3 large tomatoes, coarsely chopped
oil, peanut or olive oil
salt, pepper, garlic powder (optional) to taste


Slice half the onion thinly, put aside.  Add the other onion half chopped, the garlic, pumpkin seeds, salt, pepper, cumin, and cayenne to a food processor to make a paste.  Add this mixture to the ground beef, along with the ketchup and Worcestershire sauce, and blend well but do not overwork.  Form small meatballs.

Heat the oil in a deep pan or caste iron pot.  Add the sliced onion and saute for a few minutes, until the onions are translucent. Add the meatballs and brown slowly on all sides.  Add tomatoes, salt, pepper and garlic powder, and stir in some water to cover meatballs.  Bring to a boil, reduce to a simmer and cook until meatballs are done, about 60 minutes.
