Caribbean Reef Chicken (Dominica)

Yield:  6 Servings


2 broiler/fryer chickens – halved
½ tsp. salt
¼ tsp. pepper
½ cup dark brown sugar
4 tbs. dark rum – divided
1 tbs. lime juice
2 tsp. lemon pepper
1 tsp. ginger
½ tsp. cloves – ground
¼ tsp. cinnamon
¼ tsp. garlic powder
2 drops hot pepper sauce
10 oz chutney – mango
lemon – sliced
lime – sliced


Sprinkle salt and pepper over washed and dried chicken. Set aside.

In a small bowl, make Caribbean paste by mixing together sugar, 2 tablespoons of the rum, lime juice, lemon pepper, ginger, cloves, cinnamon, garlic powder, and hot pepper sauce; set aside.

Place the chicken, skin side up, in a large shallow baking pan. Rub Caribbean paste evenly over the chicken. Bake in a 400°F oven for 45 minutes or until the chicken is fork tender. In a blender, place chutney and remaining 2 tablespoons of rum; process to blend. Spoon chutney mixture over chicken and bake about 3 minutes more or until chutney is warm.

Arrange chicken on a serving platter. Garnish with lime, lemon, and parsley.

Mango Chutney (Caribbean)


4 cup under-ripe mangoes-diced
1 cup dates-chopped
1 cup golden raisins
2 Scotch Bonnet or Habañero peppers-chopped
4 cups red wine vinegar
4 cups sugar
4 oz green ginger (unripe)-chopped
½ lb onions-chopped
2 cloves garlic-minced
1 teaspoon mustard seed
2 oz salt


Add fruits and hot peppers to vinegar and allow to sit for a day.  Then add sugar, ginger, garlic, onions and other seasonings.

Boil all the ingredients together gently until the chutney is thick and brown.

Notes:  You could substitute the mangoes with pears, peaches, or apples to make different flavoured chutneys.  Great with curry dishes.

Green Mango Salad (Dominica)

“Easy Caribbean Green Mango Salad that will blow you away and have you coming back for more.”


2 tsp lime juice
4 green mangoes
2 green onions
1 tsp salt
1/2 hot green pepper


Peel mangoes and cut into 1 1/2 pieces.  Then in a bowl chop green onions.  Add pepper and salt. Then pour over 1/2 cup vary hot water.  Allow to stand for 2 minutes.

Add lime juice and pour over mangoes and allow to stand for another 2 minutes. Then Serve.
