Baked Cod with Tomatoes and Curry (Kiribati)
Yield: 6 Servings
2 lb cod fish fillet
2 tablespoons butter
1 onion, finely chopped
1/2 cup green pepper, finely chopped
2 teaspoons flour
½ teaspoon brown sugar
1 tablespoon curry
1 (15 ounce) cans diced tomatoes with
salt and pepper
Preheat oven to 400 degrees. Spray a baking dish with non-stick spray. Melt butter in a pan over medium heat. Saute onion until softened. Stir in brown sugar, flour, curry, salt and pepper to taste, and mix well. Add tomatoes with juice and bring to a boil. Stir to thicken sauce.
Place cod fillets in baking dish, top with the sauce, and bake for 12-15 minutes or until fish is cooked and flakes with fork.
