Malawi-Inspired Meatballs (Malawi)
Inspired by a Malawian ground goat meat recipe
Yield: 8 Servings
1½ lbs ground lamb
1 tsp salt
¼ tsp pepper
1¼ cups beef stock (optional) + 2 tbsp
2 onions, 1 chopped, 1 finely minced
3 cloves garlic, finely minced
2 tbsp worcestershire, or A-1 steak sauce
2 tbsp butter
Combine lamb, salt, pepper, egg, minced onion, garlic, Worcestershire, and 2 tbsp beef stock. Mix well, but do not overwork meat. Add bread crumbs to desired consistency and mix well. Shape meatballs to size.
Melt butter in pan and add chopped onions, saute until translucent. Add meatballs and brown on all sides. Add stock if desired and simmer covered until done.
