Moldovan – Inspired Meatballs (Moldova)

Yields: 8-10 Servings


1-1/2 lbs. ground beef
1 small red onion, finely chopped
3-5 garlic cloves, finely chopped
1 large potato, peeled and grated
3 tsp salt
1 tsp freshly-ground black pepper
1/2 tsp garlic chili paste or dried chili, crushed
3 tbsp fresh parsley, chopped
2 tbsp fresh dill, chopped
1 tsp smoked paprika
all-purpose flour
2 large eggs, beaten
Plain or seasoned breadcrumbs
4 tbsp olive oil


Heat 2 tablespoons of oil in a pan, add the grated potatoes, salt and pepper to taste.
When the potatoes soften, add the onions and garlic to translucent, but do not brown.

Remove the potatoes, onions, and garlic from oil to cool and reserve oil in pan.
Combine the beef and cooled onions, garlic and grated potatoes in a large bowl.

Season with the salt, black pepper, chili paste, paprika, parsley, and dill. Mix the
ingredients thoroughly with your hands but do not overwork the meat.

Shape into meatballs. Dredge in flour, eggs, and breadcrumbs to coat thoroughly.
Add the remaining oil to the pan and fry the meatballs on medium heat, turning until
golden brown and cooked through, about 20-25 minutes.

Moldovan Tomato, Cucumber, and Pepper Salad (Moldova)

This is a traditional Moldovan recipe for a salad of tomatoes, cucumbers and bell peppers dressed with red wine vinegar and olive oil and topped with crumbled Feta cheese.

Yields: 6 Servings


2 medium tomatoes diced
2 small cucumbers peeled and diced
1 red bell peppers diced
2 long red bell peppers diced
1 red onion chopped
1/2 bunch flat-leaf parsley coarsely chopped
60 grams Feta cheese crumbled
3 tablespoons extra virgin olive oil
6 tablespoons red wine vinegar
salt and freshly-ground black pepper


Combine the peppers, onion, tomatoes and parsley in a bowl. Now whisk together the olive oil and red wine vinegar, season with salt and black pepper and pour over the salad. Toss lightly to combine then refrigerate for at least 1 hour.When ready to serve crumble the Feta cheese over the top and bring to the table.
