Frango a Portugesa (Chicken the Portuguese Way)

Yields: 6 Servings

Ingredients

2 x 1.2kg chickens cut into serving pieces
150 grams butter
200 grams finely-chopped onion
1 garlic clove finely minced
2 tablespoons flour
500 grams canned whole tomatoes (broken with a potato masher)
60 ml sherry
1 tablespoon salt
1 teaspoon red chili flakes

Directions

Brown the chickens in the butter in a large pan. When colored on all sides remove the chicken from the pan and set aside.
Fry the onion and garlic in the remaining oil until soft then add 2 tbsp flour and blend to a roux. Add the tomatoes, sherry, salt and chili.Blend together, return the chicken to the pot, then turn the heat down to a simmer, cover and cook for about 45 minutes or until the chicken is done.

Ananas con Vinho do Porto – Pineapple in Port Wine (Mozambique)

This is a traditional Mozambican recipe for a classic dessert of lightly-sweetened pineapple slices marinated in port wine before serving.

Ingredients

Yields: 6 Servings

1 large, ripe pineapple
250 mililiters port wine
sugar, to taste
50 grams cashew nuts lightly toasted and chopped

Directions

Peel the pineapple then cut into slices 1cm thick. Sprinkle each slice of pineapple to
sweeten slightly on both sides.

Place the pineapple slices in a bowl and add the port wine.

Cover and set aside to infuse over night, turning the pineapple slices occasionally to
ensure that they marinade evenly.

Arrange the slices in dessert dishes, garnish with the chopped cashew nuts and serve.
