Nigerian-Inspired Meatballs (Nigeria)

Yield: 8-10 Servings


1 ½ lbs ground beef
2 tsp. madras curry powder
1 onion, finely minced
3 cloves garlic, finely minced
1 tbsp. thyme, finely chopped
¼ tsp. cayenne pepper
2 tbsp. beef stock
1 tsp. salt
¼ tsp. pepper
1 egg
1 cup carrot, finely diced (optional)
bread crumbs
1 tbsp. olive oil


Combine ground beef, curry, minced onion, garlic, pepper, thyme, cayenne, salt, pepper, carrots (optional), egg, and 2 tbsp beef stock.   Mix well, but do not overwork meat. Add bread crumbs to desired consistency and mix again. Shape meatballs to size.

Heat oil in pan and brown meatballs on all sides, cook until done or simmer in a tomato sauce.
