Tandoori-Inspired Marinated Chicken (Palau)

Yield: 6 Servings


2 lbs. chicken thighs, boneless and skinless
6 cloves garlic crushed
3 tsps fresh ginger, peeled and grated or minced
1 tbsp garam masala
1 tsp smoked paprika
1 tsp paprika
1/2 tsp crushed red pepper
1 tsp ground cumin
1 tsp ground coriander
1/2 cup vegetable oil
1/2 cup lemon juice
salt and pepper to taste


Mix all ingredients except chicken in a bowl. Add chicken, coat thoroughly. Cover bowl and refrigerate for at least one hour. Place chicken pieces on a baking sheet and cook in a 350o oven until done, turning over once halfway through.
