Brochettes de Boeuf – Beef Kebabs (Rwanda)

This is a traditional Rwandan recipe for a classic kebab of marinated beef that’s cooked on a barbecue and served with hot sauce. 
Yields: 6 Servings


900 grams beef cut into bite-sized pieces
1/2 large onion finely chopped
10 parsley sprigs chopped
1 teaspoon salt
1/4 teaspoon freshly-ground black pepper
1 hot chili finely chopped
2 teaspoons paprika
1 teaspoon ground cumin
1 tablespoon vinegar
1 tablespoon olive oil


Whisk together all the ingredients (except the beef) in a bowl until thoroughly combined then add the beef and stir to coat evenly.  Cover the bowl with plastic wrap and refrigerate for at least 8 hours (preferably over night).  When ready to cook, heat your barbecue then spear five or six pieces of meat on each skewer.  Cook over the barbecue until done to your liking.
