Arabian- Inspired Meatballs (Saudia Arabia)
Yield: 8-10 Servings
1 ½ lbs ground beef
1 medium onion, chopped or minced
3 cloves garlic, finely minced
1 tbsp ketchup
½ tsp salt, or to taste
¼ tsp freshly-ground pepper, or to taste
1 tsp chopped fresh mint leaves
2 tbsp chopped parsley
1 tbsp lemon juice
white wine (a few tbsps)
¼ cup breadcrumbs, more if needed
Combine all the ingredients in a bowl (except the bread crumbs), and mix well by hand. Do not overwork the meat mixture.
In a separate bowl, add enough white wine to breadcrumbs to moisten, then add breadcrumbs to the meat mixture to the desired consistency.
Form meatballs and saute in olive oil until done. Simmer in sauce (optional).
