Somalia-Inspired Meatballs (Somalia)
Here is my meatball recipe from an Iskudheh Karis II (Meat Pilaf)
Yield: 8 – 10 servings
2 lbs ground beef
1 large onion, finely minced
1/8 tsp cardamom
¼ tsp cinnamon
1 tsp granulated garlic
1 tsp ground cumin
1 tsp ground coriander
1 tsp ground ginger
2 tbsp tomato paste
salt and freshly-ground black pepper, to taste
Mix the ground beef all of the ingredients except the breadcrumbs. Mix well but do not overwork. Add breadcrumbs to the desired consistency. Brown the meatballs in oil until done.
