Poulet Djenkoumé – Djenkoumé Chicken (Togo)
“This is a traditional Togolese recipe for a classic dish of chicken cooked in a tomato, ginger, onion, chili and garlic base that’s served with cornmeal cakes.”
Yield: 4 Servings
4 chicken legs
250 grams cornmeal
5 onions, peeled and diced
2 hot chilies cubed
6 garlic cloves finely chopped
5 spring onions chopped
4 tomatoes, cubed
4 tablespoons oil
5 tablespoons tomato purée
15 grams fresh ginger peeled and grated
salt and freshly-ground black pepper
Place the chicken legs in a pot along with half the garlic, the ginger and the spring onions. Season to taste, add enough water to cover the ingredients, then bring to a boil. Reduce to a simmer, cover the pan and cook for 25 minutes, or until the chicken is tender. Remove the chicken and set aside to keep warm then strain the stock into a bowl.
Heat 3 tbsp of the oil with 3 tbsp of the tomato purée in a skillet. Cook for 2 minutes, stirring constantly, then add the onions, chilies and the remaining garlic. Cook for 10 minutes over low heat, stirring constantly, then add a ladle full of the reserved chicken stock. Adjust the seasonings to taste then cook for 2 minutes more before returning the chicken to the pan and adding the diced tomatoes. In the meantime, prepare the cornmeal dough.
Whisk the remaining tomato purée into the left-over chicken cooking stock then beat in 50g of the cornmeal. Pour into a pan, bring to a boil, stirring constantly then, still stirring constantly, add the remaining cornmeal. Continue cooking until the mixture thickens to a stiff porridge. Turn into a pan, transfer to an oven pre-heated to 180°C and bake for 20 minutes.
Once all the ingredients are ready, heat the remaining oil in a frying pan. Remove the chicken legs from the hot sauce and fry in the oil until browned. To serve, cut the cornmeal into squares. Add a square to each of four plates along with a chicken leg. Spoon over the red sauce and serve.
