Caracas Chicken (Venezuela)

Yield: 4 Servings


3 oz. olive oil
2 onions
3 large tomatoes
1 garlic clove
A pinch of chili pepper
1/4 tsp ground turmeric
1/4 tsp ground cumin
1 tbsp sugar
1 tbsp of ginger paste
14 oz. coconut milk
4 oz. water
4 chicken breasts
4 bay leaves


Heat the oil in a large saucepan, add the onion and sauté gently until soft and transparent. Transfer the onions to a food processor together with the tomatoes, garlic, turmeric, cumin, sugar, ginger paste, coconut milk and water and blend until smooth. Add the chicken to the frying pan toss to coat then add the tomato mixture, bay leaves and salt, mix well, partially cover and cook for 45 to 50 minutes, stirring from time to time.

Remove the bay leaves before serving.

Guasacaca (Wah-Sah-Kaka) Salsa De Venezuela

“Unlike guacamole, everything is hand-chopped.  Use it as a salsa for arepas, a chopped salad with meals, a chunky dip for corn chips.”

Yield: 6 Servings


1 medium tomato
1 medium onion
2 avocados
1/4 cup minced bell pepper
3/4 cup cilantro leaf
2 teaspoons lemon juice
1 teaspoon salt
2 teaspoons hot sauce


Chop by hand, all the vegetables and the remaining ingredients and mix together. Chill for at least 3 hours.  Serve as a dip for nacho chips or as a salsa with anything.
