Kebab with Garlic (Western Sahara)

“Kebab with Garlic Recipe is a traditional Western Saharan recipe for a classic dish of minced beef combined with garlic, sambal olek and milk that’s shaped on skewers, barbecued and served with a garlic and chive sauce.”

Yield: 4 Servings


1 lb. minced beef
2 garlic cloves minced
1 teaspoon salt
1/2 teaspoon sambal olek
1 teaspoon ground cumin
1/2 cup milk
1 cup garlic and chives sauce


Combine the beef, garlic, salt, sambal olek, cumin and milk in a bowl. Mix with your hands until smooth and thoroughly blended then shape the mixture around eight skewers.

Place on a hot barbecue or under a grill (broiler) and cook for around 8 minutes, or until done through. Serve hot with lemon wedges and couscous. Accompany with a garlic and chive sauce.

Sambal Olek (Western Sahara)

“This is a traditional Indonesian recipe for a classic chili-based condiment that’s used either as an accompaniment to, or as a basis for a range of Indonesian dishes. Oleks are the relishes and condiments of Indonesian cuisine where their heat enlivens the rice-based diet.”


6 oz small dried red chilies
Juice of 2 limes
1/2 lime, grated zest
2 tablespoons sesame oil
salt to taste
boiling water to cover chilies


Cover the chilies with boiling water and allow to stand for at least 1 hour to soften. Drain (but reserve some of the soaking liquid). Add the chilies, the lime juice and lime zest and sesame oil to a blender and purée as smoothly as possible. Add the salt and a little of the soaking liquid, if needed to thin the mixture, and purée again to a fine purée, but a thick consistency.

Garlic and Chives Sauce (Western Sahara)

“This is a modern Fusion recipe for a classic dipping sauce of garlic and chives in a mayonnaise, Greek yogurt and sour cream base flavored with curry powder.”


2/3 cup mayonnaise
8 tablespoons Greek-style yogurt
6 tablespoons sour cream
4 tablespoons fresh lemon juice
4 tablespoons fresh chives chopped
2 large garlic cloves minced or grated
1/4 teaspoon curry powder
1/4 teaspoon olive oil
1/4 teaspoon dried oregano crumbled
1/4 teaspoon onion powder
generous dash of hot sauce
salt and freshly-ground black pepper


Combine the mayonnaise, yogurt and sour cream in a bowl. Add the lemon juice then stir in the chives and garlic. Finally add the curry powder, oregano, olive oil, onion powder and hot sauce. Season to taste then stir well to combine. Serve chilled.

This dipping sauce makes and excellent accompaniment to any grilled or barbecued meats.
