Haitian-Inspired Meatballs (Haiti)

Yield: 8-10 Servings

Ingredients

1 ½ pound freshly ground lean beef
2 slices smoked bacon, minced
2 garlic cloves, finely minced or crushed
1 small onion, finely minced
1 tbsp parsley
2 tablespoons tomato paste
1/2 cup flour
1/2 cup grated Parmesan cheese
Salt and pepper to taste

Directions

Crisp bacon in a frying pan, crumble into mixing bowl. Combine all other ingredients, except flour and cheese, and mix well by hand.  Do not overwork the meat mixture. Form large meatballs and coat with flour and then with cheese.

Saute in olive oil (or drippings from bacon, if preferred) until done. Drain on absorbent paper. Serve hot with a dipping sauce.

Tassot (Haiti)

“Fried Beef or Goat. A flavorful meaty addition to any menu.”

Yield: 4–6 Servings

Ingredients

2-3 Lbs. beef or goat, cut into small chunks
1/2 cup orange juice
1/4 cup lime or lemon juice
1/2 cup vegetable oil
1 tsp parsley
Salt and black pepper, to taste
1 tbsp minced garlic
1 tbsp onion powder

Directions

Add all ingredients in a large bowl, except for the vegetable oil. Let them marinate for at least 3-4 hours. Transfer meat mixture into a cooking pot. Add water to cover. Heat to boiling and reduce heat. Simmer covered until meat is very tender. Fry meat in a large frying pan, until golden brown.

Mais Moulin (Haiti)

“Corn Meal. A filling staple that may be served at any time of the day.”

Yield: 4-6 Servings

Ingredients

1 cup coarse corn meal
3 cups water
1 clove garlic, minced
½ onion, finely chopped
1 tsp thyme
2 tbsp vegetable or corn oil
1 plum tomato
1 tsp parsley
salt and black pepper to taste

Directions

Saute garlic, tomato, and onion in oil. Add water and bring to a boil. Combine remaining ingredients. Stir mixture repeatedly to avoid clumps.
