Timor-Leste

Indonesian Curry Chicken (Timor-Leste)

Yield: 4 Servings

Ingredients

1 chicken (1 1/2 kg and cut into 12 meaty pieces)
3 tablespoons coriander powder
2 tablespoons cumin powder
1 tablespoon anise powder
2 cm cinnamon stick
2 tablespoons turmeric powder
2 tablespoons chili powder
12 drops shallots
4 cloves garlic
1 stalk lemon grass
2 cm ginger
4 tablespoons cooking oil
1 coconut, extract 4 cups of coconut milk (2 light and 2 thick)
2 tablespoons green peppercorns

Directions

Fry shallots, garlic, ginger and lemon grass in oil until brown.  Then add in the spices together with cinnamon stick until fragrant.  Add in chicken meat and fry for about 3 minutes.

Later, add in 2 cups light coconut milk and leave it to boil for 20 minutes.  When the chicken is tender, add 2 cups of thick coconut milk and simmer curry.  Lastly, add in salt to taste.
