Portuguese Beef and Onions (Portugal)

Yield: 6 Servings


1 tablespoon Olive Oil
450 g/1lb Beef Steak (rump, sirloin, fillet), cut into very thin slices
2 Large Onions thinly sliced
2 Garlic Cloves crushed
450 g/1 lb Tomatoes chopped
1 tablespoon freshly Chopped Parsley
1 Bay Leaf
Salt and Black Pepper
Freshly chopped Coriander


Heat the oil in a large frying pan until very hot, add the beef and fry for 2-3 minutes to seal on all sides. Add onion, garlic, tomatoes, parsley, and bay leaf, season with salt and pepper and heat to simmering point. Reduce the heat to low, cover and cook for 20 minutes. Remove the lid, raise the heat, bring to the boil and continue to boil rapidly, uncovered for 5 minutes to reduce the amount of liquid. Serve hot sprinkled with fresh coriander.

Portuguese Style Sauteed Potatoes (Portugal)

Yield: 4 Servings


2 lbs Idaho potatoes peeled
2 tablespoons olive oil
1 large onion chopped
2 -3 garlic cloves minced
1/2 teaspoon smoked paprika
salt and pepper


Cut each potato into an even rectangular shape by cutting off the bottom, top, and sides; cut into 1/2-inch cubes.  Place potatoes in a medium, heavy saucepan.  Add enough cold water to cover, season with salt, and bring to a boil.  Reduce heat and simmer until potatoes are slightly tender, about 10 minutes. Remove from the heat and drain potatoes on paper towels.

In a large saute skillet, heat olive oil over medium heat.  Add the onions and saute until soft, about 3 minutes.  Add the garlic and saute for 30 seconds.  Add the drained potatoes and cook, turning, until browned on both sides, about 10 more minutes.  The last few minutes, add the smoked paprika and mix.
