Chicken and Rice (Tuvalu)
My version of chicken and boiled rice
Yield: 6 Servings
Ingredients
2 lbs. chicken breasts boneless/skinless, cut into chunks or small strips
Bell peppers
1 medium onion chopped
2 small tomatoes diced
3 tbps soy sauce
1 inch fresh ginger finely chopped
4 cloves garlic finely chopped
1 teaspoon turmeric
1/4 teaspoon crushed red pepper
1 teaspoon salt
1/2 teaspoon pepper
2 cups boiled white rice
water
Directions
Marinate chicken in the soy sauce. Heat oil in pan, add garlic and ginger. Cook for 1 minute or two on medium heat, do not overbrown. Add bell pepper, tomatoes and onion mixture. Stir and cook until onion is translucent.
Add chicken, cook about 10-15 minutes. Add salt and pepper. Stir and cook 1 minute. Add turmeric and crushed red pepper. Mix well and cook 1 more minute.
Add water, about ½ cup. Let cook until the chicken is tender or place in slow cooker on high for 30 minutes or more.
Serve chicken over rice.
