Easy and Quick Swiss Steak (Switzerland)
Yield: 8 Servings
Ingredients
1 tablespoon vegetable oil
2 cups all-purpose flour
salt and pepper to taste
paprika to taste
2 pounds beef cube steaks
3 green bell pepper sliced into rings
3 red bell pepper sliced into rings
4 onions, sliced into rings
4 (14.5 ounce) cans crushed tomatoes
Directions
Heat the oil in a skillet over medium heat. In a bowl, mix the flour, salt and pepper, and paprika. Dredge the steaks in the flour mixture, and place in the skillet. Brown steaks on both sides, and remove from heat.
In a slow cooker, alternate layers of steak, green bell pepper, red bell pepper, onion, and tomatoes. Cover, and cook 6 to 8 hours on Low, until steaks are very tender.

Cheese Rosti (Switzerland)
Yield: 6 Servings
Ingredients
6 large potatoes
6 tablespoons butter
8 ounces Swiss cheese grated
salt to taste
ground black pepper to taste
2 tablespoons hot water
Directions
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, and let cool. Once cool, peel and grate potatoes.
Melt 3 tablespoons of butter in large nonstick skillet, add a layer of potatoes and a layer of cheese, sprinkle with salt and pepper. Repeat layers. Dot each layer with remaining butter.
Sprinkle 2 tablespoons hot water over the top layer, cover and saute at low to medium heat until bottom layer browns. Turn with spatula and brown again
